SUPER SUNDAY!

So, yesterday was the Super Bowl for us US football fans! We intended on just having some burgers and brats and some chips, queso, and salsa. (pepperoni crisps for me!) Then we invited a couple of friends over. No big deal! While at church, one of our OTHER friends said he was just going to stay home because his wife was in Florida. So we invited him over as well. So it was 6 of us watching the “Big Game!”

I made WAY too much food. Lol but it was all stuff I can eat (minus the chips and buns)!  We had burgers, brats, mozzarella and tomatoes, queso, salsa, tortilla chips, pepperoni crisps (which were a big hit with the non low Carbers), shrimp, and jalapeno poppers,! There was quite a bit of food left over! We had a fun night.

The game itself was a bit of a disaster. I won’t give any spoilers away since I know SOME people don’t watch live. At one point we got into a discussion about American Idol versus Americas Got Talent. One of or friends said that a singer always wins AGT. We started telling him about Kenichi Ebina that won last year and went to YouTube to watch a couple of his performances. (if you haven’t heard of him, seriously YouTube him. Right now! I’ll wait!)

My puppy decided that the pepperoni crisps were for HER and decided to have a few bites. I was a LITTLE bit upset. Those things were good! Of course, that didn’t make me stop eating them. πŸ˜‰

Overall, we had a great night, joked with friends who were rooting for the loser team, tho THEY didn’t find it as funny. πŸ˜‰ it was a great night, filled with great friends and great food.

This morning I had a leftover cheeseburger for breakfast. Life is good!

Weigh in AFTER breakfast?! *gasp*

So, yesterday I was chatting with a friend on fb. We were talking about the Scentsy party I’m throwing in February because I want the little rooster warmer because he’s so darn cute and would look great in my kitchen. He asked me how my weight was going and if I was still in ketosis. (Well, actually, he asked me if my pee sick was still purple.. Lol) I told him yes, that my official weigh in on Friday was 201. He got confused for a second because I had posted on fb that I had hit 199.8 earlier in the week, and I said I had, but official weigh ins are on Friday and that’s what I go by. So, that got me thinking about what my weight was. Surely it would be more that 201 with the half pound of bacon I just ate (and I’m only slightly joking… Lol) and the big mug of tea with Splenda and cream! Well, I stepped on the scale and it popped up as 198.6! Can you believe that? Lets hope it sticks!
Other than that, things around here have been okay. Had a little stress with some money issues this week, but, hopefully they are taken care of and won’t be an issue any more. Hopefully! I had some baby chicks hatch the other day! Those little balls of fluff make my heart happy. Oh….. I guess I should tell you that we’re suburban homesteaders…. or at least wanna-bes! We have chickens, rabbits, a small orchard, and a garden. I sell bunnies and chicks to make a little extra money, or to at least supplement the feed bill. πŸ˜‰
Anyways! These little balls of fluff!! They are just the cutest things. I was there when they hatched so they think I’m mommy. So cute.
We’ve also been trying to clean out the cupboards of all the carby food. Last night I made tuna noodle casserole for the fam, and I made myself some pan fried talapia and a salad. Tonight is “heroin wings” tho I don’t like wings so I make mine as breast nuggets. Lol Tomorrow is lasagna with noodles and salad for the family, and I will make myself a smaller one that has pepperoni instead of noodles.
I’m very excited for my next goal (which is onederland) and how that will come about. My “prize” is a cut and color. I have a feeling I’m going to wimp out on the cut, tho I do LOVE the cut, I’m not really one for changing my hair. I’ll color it all day, but cutting……. eh, not so much! I think the last time I CUT my hair is when I was pregnant with my daughter (who is 10 btw) and I got 14 inches cut off and it was still to my shoulders. Mind you I didn’t ASK for that much cut off! Maybe that’s why I never get my hair cut, because they always jack it up. Lol

It’s cold, and I want to eat!

So, I weighed in this morning. I’m 203, which means I “gained” .4 pounds. I’m not worried about it. My pants are fitting better, I feel great. πŸ™‚

So! Today, the high is 37, and it won’t be all that great the rest of next week either, minus Sunday, but it’s supposed to rain, so that doesn’t count.

All I know is that it’s supposed to be 21 tonight. Um, no thank you! Where is my beach weather?! I KNOW it’s winter, but, I’m not used to this cold any more! This kind of weather is where I make a giant pot of chili with beans, make grilled cheese sandwiches with Velveeta cheese, and snuggle on the couch and watch movies with a nice fire in the fireplace. That just doesn’t work any more. I guess I COULD make chili with no beans, and just put real cheese and sour cream in my bowl and make grilled cheese for the fam.

 

I’m going to share my newly favorite “warm food” (which is what we call Chili!). It’s called Stroganoff Soup. It’s DELISH!! I borrowed this from Kyndra over at Peace, Love, Low Carb. I prepped everything in my cast iron skillet, then transferred it to my crock pot.

 

Stroganoff Soup

Ingrediets

  • 32 oz beef stock
  • 10 mushrooms, thinly sliced
  • 1 medium onion, diced
  • 3 Tbs garlic, minced
  • 3 Tbs butter (I used MUCH less, more like 1 Tbs)
  • 1 1/2 pound steak – sliced thin (I cut mine in about 1/4-1/2 inch thick slices)
  • 1 cup heavy cream
  • 1 cup sour cream
  • 2 Tbs beef bouillon granules
  • 2 Tbs Dijon mustard
  • 2 Tbs Italian Flat Leaf Parsley, chopped (or about 1 Tbs dried)
  • 1 1/2 tsp Onion Powder
  • 1 1/2 tsp Garlic Powder
  • 1 tsp Dried oregano
  • 1 tsp Sea Salt

Directions

  1. Heat slow cooker on high setting, add beef stock and mushrooms, cover.
  2. In a large Saute pan, over medium heat, saute the onions and garlic in butter, until translucent and soft. Add to slow cooker.
  3. Using the same pan, add the steak into the pan and sear it on both sides. About 1-2 minutes
  4. To the slow cooker, add steak, heavy cream, sour cream, beef bouillon granules, Dijon, parsley, onion powder, garlic powder, oregano, and salt, then mix.
  5. Cover and cook on high for 6 hours.

12 1 cup servings with 4.5 net g of carbs!

It’s a GREAT way to gave something warm and delish on a cold night.

Post Thanksgiving weigh in

Well, today is “Black Friday,” the busiest shopping day of the year. Well, I’ve got everyones Christmas presents done, except for my Momma, and stocking stuffers.

I got my son, who will be 15 in December, Battlefield 4, a Minecraft t-shirt, and a Legends of Zelda t-shirt. I think that I’m going to get him an iTunes gift card and maybe a razor as a stocking stuffer. My daughter, who is 10 1/2 (the half is SUPER important!), got a combo straightening/curling iron, a new hair dryer, and a 48 piece nail polish set. I can’t say what I’m going to get my Momma, because I think she reads my blog. πŸ˜‰ I’m also thinking about getting my husband a new electric razor for his birthday/Christmas present. He always says he doesn’t want anything, but, I always get him something practical that I know he will use and he is always happy and thankful.

ANYWAYS! Thanksgiving!!!!!! I had a great time! It was at our friend Amys house again this year. Β She always does a BIG Thanksgiving. We had grown the turkeys at our place this year, and apparently we’re being “selected” to grow them for next year as well! LOL So, I’m already looking at prices for turkey for next year. We did have fun raising them, so it is something that we would do again I think. πŸ™‚ I don’t THINK I went over my carb limit, but I guess it will depend on how many carbs the pumpkin bake I made was. (The recipe said 7 or 9 depending on if you used liquid or granular Splenda, and I made a double batch and only used half the Splenda… so….. I dunno! LOL) I tried to cut the pieces for myself small, but, you never know. If I WAS over, it wasn’t by a whole lot. I stuck with meat, cheese, more meat, a couple pieces of my pumpkin bake with whipped cream, and meat. Oh, and 1 glass of wine and meat.

My weigh in this morning I was at 209.2, exactly 1 pound more than I was last week, but, after all the meat I ate yesterday, I’m not super worried! (I ate a LOT of meat!!!) Did I mention I ate a lot of meat? πŸ˜‰

Week 3 weigh in

So, today has been a very busy day. Since we’re eating Thanksgiving at our friends house, and our other friend is moving, I got the torch passed to me on the Thanksgiving day shopping. Well, our friends husband was rushed to the hospital for blood clots in his lungs, so, it was just me and her. (He’s fine btw, they caught it in time!)

Well, for our first stop of the day, we grabbed 2 carts at Sams Club, and we filled them both pretty much up!! We packed up my truck, and headed to our next stop, WalMart! I got a few things that I was still needing for the week, and did a little “recon” for Christmas gifts. My son is getting Battlefield 4, which is the only thing that he’s asked for and a couple of gamer shirts as well as a couple toy guns that I got for him to try for free, The lil miss is getting a straightening iron that is also a curling iron, a new blow dryer, and a manicure set with some nail polishes. I hope that this will be sufficient and that they will both be happy with the gifts that they get this year. I’m thinking about getting my husband a new electric razor. He is on blood thinners and if he were to nick his face, it could be difficult to get it to stop bleeding, so he doesn’t shave that much. It drives me CRAZY!! He spent the first 4 years of our relationship smooth faced, and before I met him, all my boyfriends were clean shaven as well. I’m not one for facial hair. I’ve asked for a nice fluffy bath robe. Our final stop for the day was Food Lion and then back to her house to unload everything!

Tonight, I made broiled parmesan swai and broccoli. I think that has become my favorite meal! It’s SO GOOD!

Oh yeah!! I weighed myself this morning! My official 3 week weight is 208.2! That’s a total of 15.8 pounds for 3 weeks. Which also means I only lost 3 pounds this week. Kind of a lacking 3rd week considering in my first 2 weeks I lost over 12! LOL It’s okay tho! I’ll take it! I was told that my face looks thinner today. I don’t see it, but, I’ll take any compliments that come my way! πŸ˜‰

I’m a slacker!

Yes, I know that I said I would post the Chicken Parmesan Meatball recipe “tomorrow” in my last post. Very sorry! I work for an online marketplace and I made a comment about making recycled market bags. That landed me a gig making some (about 40). Well, my sewing machine decided that it was going to take a crap on me, so I had to try and find someone to repair it. I refused to pay more than $60 for someone to LOOK (not including labor and parts) at my $80 sewing machine that my husband bought me for our anniversary to learn how to sew on. So, I took it to a friends house and she managed to get it working for me! HOORAY! But that left me less than a week to make the remaining 35 bags. *insert horror movie scream here* So! It’s not that I’m trying to ignore all my lovely followers, I’ve just been sitting at a sewing machine for the last few days! I also feel like I’ve taken my blood sugar from each of my fingers about 15 times each as well. Straight pins hurt! (That’s my tip for the day.)

 

ANYWAYS! Here is the recipe

Chicken Parmesan Meatballs

Ingredients

  • 1 lb ground chicken (I actually used turkey.. haha)
  • 1/2 cup pizza sauce, divided
  • 1/4 cup Parmesan, shredded (grated is fine if you don’t have shredded)
  • 3 Tbsn Parsley
  • 1 Tbsn garlic, minced
  • 1/2 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1/2 tsp garlic salt
  • 1/4 tsp black pepper
  • 3 oz Mozzarella cheese

Directions

  1. Preheat oven to 350
  2. In a large bowl, combine chicken, 2 Tbsn pizza sauce, Parmesan cheese, parsley, garlic, itanion seasoning, onion powder, garlic salt, and pepper.
  3. Form into 12 equal meatballs. Bake for 25 minutes on middle rack
  4. Remove from oven, spoon pizza sauce over top of each meatball and top with mozzarella cheese
  5. Broil on top rach until cheese is golden brown (about 2 miunutes)

 

I promise you, this recipe is well worth the weight! (Ha! Get it?? weight… wait… okay.. I’m done.)

In other news!! I weighed myself yesterday morning, and it read 210. Whaaaaaaat!! That’s 14 pounds my friends! 14 pounds in less than 2 weeks! YESSS! My sister asked me if I had lost any inches… and wouldn’t you know it.. I never did take any measurements! LOL I also forgot to take a “before” picture. *sigh* I guess a “14 pounds gone” picture will have to do! πŸ˜‰

Anyways! Today is another busy day! I’ve got a couple more bags to make, some work emails to answer, a honor roll ceremony for my daughter, then dinner and play rehearsal! GAH! Today is going to be busy!

Baked shrimp scampi

Sorry that it’s so late tonight guys! Holy cow it’s been a day!

I got the daughter off to school late because she was finishing her homework. The only downside to going to a movie mid week!

So! Today was a bit crazy. I cleaned my entire kitchen, washed all the dishes and put them away, ran a load of laundry, then i went to the half priced book store and traded in some books and got some Atkins books and low carb recipe books. In the process of digging thru the stacks and piles and hoards of books, I managed to knock almost an entire bookshelf on top of me! I guess it was a good thing tho, because I found 2 good books in the rubble! After that i did some more cleaning, got the kiddo from school, feed and watered the outdoor animals, made that yummy looking dish in the picture, and then it was off to play rehearsal. Shew! I then pick up my sewing machine (I’m so glad to have her back and in working order again!) Chatted with my friend Marge for a bit, then came home, dinner dishes into the dish washer and sat and chatted with the hubby who had made it home from work. I then watched Greys Anatomy and now I’m in bed. See? Busy day! Lol

Tomorrow is my official 1 week weigh I’m. I’m nervous! I shouldn’t be tho. I’m close to losing 10 pounds my first week! Um, crazy! I’m really enjoying Atkins tho. It’s like my body finally is working and I feel exquisite, like a Kentucky Derby winner! Is that weird? I feel like a racehorse. I sure do miss the track sometimes. Always something happening there.

I promised my sister I would post the recipe for baked shrimp scampi, which is what that is in the picture. Let me warn you. This dish is like crack! I could have eaten all 2 pounds of shrimp, but I stopped myself.

Shrimp Scampi Bake

2 pounds raw shrimp (I used ones without tails)
1 cup butter
1 Tablespoon lemon juice (I used a little more)
1 Tablespoon prepared Dijon mustard
1 Tablespoon minced garlic (I used powder and just eyeballed it)
1 Tablespoon chopped parsley (I used dried, again eyeballed it)

Preheat the oven to 450

Melt butter, add lemon juice, parsley, mustard, and garlic.

Arrange shrimp in a shallow baking dish. Cover with butter mixture. Bake for 12-15 minutes.
