Macaroons

So, first off I want to say that I sometimes really suck at blogging. I get busy with one thing or another and blogging is the first thing to go!

Have no fear tho! I am still here! Still plugging away. I PROMISE that I will post my weight tomorrow. (Last weeks was 193.2 btw)

Anyways!

So today I was having a sweets craving. I have been for the last couple of days. I’m not sure why tho. Yesterday I quenched this by taking a shot of HWC with a couple packets of Splenda. It worked but it was HORRIBLE tasting! LOL It was SO sweet and kinda gritty because the Splenda didn’t dissolve in the cream. BLECK!! But id definitely worked!! So, when they kicked up today, I just decided that I was going to do something about it.

I made macaroons!!! Oh my goodness they are DELICIOUS! I found the recipe on the LowCarbFriends forum.

  • 1/3 cup Almond flour
  • 1/4 teaspoon of baking powder
  • 1/8 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla (I think I added a little more I didn’t measure)
  • 3/4 cup Splenda (I’ll admit… I only used half cup)
  • 1 Tablespoon butter – melted
  • 2 2/3 cup unsweetened flaked coconut (Mine was fine shred)
  • 1/4 teaspoon almond extract (I omitted)
  1. Blend together almod flour, baking powder, and salt, set aside
  2. Beat together eggs, vanilla, and almond extract (if using) until foamy, then gradually beat in sugar
  3. Add butter
  4. Gradually add dry ingredients to egg mixture and mix well
  5. Fold in coconut (At this point I thought mine looked a little dry so I added a little HWC)
  6. Drop mixture by rounded teaspoon, about 2 inches apart, on greased baking sheets
  7. Bake at 325 for 15 minutes, or until golden brown around the edges

This makes about 1 1/2 dozen cookies or so, and is about 36g of carbs for the entire recipe.

This is one of those recipes that is REALLY dangerous if you don’t have self control. They are SO delicious! I’ve had 4 since they came out of the oven. I’m going to put the rest of them in a ziplock and into the freezer they will go!

I hope that everyone else is doing well on their journeys!

What size?

So today I was cleaning out my closet. I have a LOT of clothes in a wide array of sized. I have just about every size between a 3 and a 16. (yes, 7 years ago I wore size 3 jeans which I will be gifting to my neice). So today I pulled down a giant attack of jeans to sort. Size 10… 10… 12… 12… 10… 14… 16… 12… Since I really don’t know what size I am, I thought I would try on the size 14 Capri pants I only wore once. (I hate Capri pants because I have stumpy legs).

Guess what?

Them bad boys fit!!!

I was BEYOND ecstatic! Of course these are Old Navy jeans, but a 14 is a 14 and I’m so stinking happy! Woooooohooooooo!

I’ll try to take a picture soon. 🙂

Fun news.

So, my daughter is a little actress. She has been in Sleepy Hollow (which the scene was all but cut!) And she’s done a couple local plays, but nothing super big.

Let me back up a few months.

A while back, I submitted Jillian to be an extra on Sleepy Hollow. They immediately wanted her and she did a fitting in Wilmington, which is about an hour from here. That same weekend they were doing open casting calls for the Disney channel. We were yet ALL DAY! We got there at 9:30 and diss not leave until almost 4. It was crazy! Anyways, they took the kids back in groups of 15 or so to read a piece that was from the show Good Luck Charlie, but with the names changed. Jillian ended up beating out Miss Teen Columbia South Carolina for a call back. I was really worried because they were back there FOREVER! And when everyone was coming back, Jillian wasn’t with the group. She was being walked up by one of the assistants. She did her call back, which she was told she did well and that we might hear from them soon. They also told me she needed to have an agent soon.

I went on the prowl for an agent. I made Facebook friends with a guy that was a child actor (Trevor Eyster from Salute Your Shorts) and he had been telling me about different aspects of being a cold actor. One of the first things he told me was NEVER pay for work, and to steer clear of any agency that wants to charge a fee to represent her. They make their money when they find you work. So, when I started getting calls and emails back from more local agencies saying that they wanted money up front, I just wrote them off. Some of them emailed and said they weren’t looking for beginner talent, and that’s fine! But there were some that would say oh yes we want her but it’s going to be $$$ for us to represent her. NOPE!

Well, while I was at work in Friday, I was perusing Facebook and I seen that a talent agency in Charlotte was having an open casting call. I thought, what could it hurt! Worst thing that could happen is that they tell me that I have to pay a fee and I write them of as well. Well, they didn’t.

I submitted her pictures online and within 2 hours (not the 7-10 days it said) I got a response saying they wanted to see her at the open house. I emailed and said we had a prior engagement, which I did… I was having a Scentsy party (which went great btw!) and Charlotte is a 4 hour drive from here. I get an email back asking for a headshot and resume. I send it, and about 10 minutes later I get a phone call from them. They want to know a little more about Jillian, so we start talking. I tell her the sorry about the Disney casting call and she was very pleased. She offered Jillian a contract right then! She said to go ahead and update her online portfolios as them as her agent and they would go ahead and start promoting her! (late winter early spring is busy season for TV around here! Lol)

I’ve just got a couple questions about the contract (mostly the wording is strange and I don’t understand exactly what it’s saying) and once that is cleared up, Jillian will more than likely have an agent! 🙂

Next comes a new portfolio, which a good friends of ours (and Jillians boyfriends mom… Lol) has offered to do. She’s very exited, as we all are!

Official weigh in.

So last night it snowed, and we all know how I feel about snow. (and in case you forgot….. I HATE SNOW!) And I woke up this morning to a wire oasis of doom. Okay. I may be a little over dramatic, but not by much. I got a 5am wake up call from the school informing me of a 2 hour delay…. a whole hour before my alarm was set. A WHILE HOUR OF SLEEP I MISSED! I’m not bitter tho…..

Anyways! On to exciting news! I I have officially lost 30 pounds! I weighed in at 194.0 this morning. Woooohoooo!

Oh yeah! *dances around the room*

In other exciting news! We FINALLY have electric in or matter suite again. It went out quite some time ago and we couldn’t figure out why. One of our friends from church was an electrician before he joined the Maine Corps, so he came over to help us out. Basically, hr said we needed a new wire ran to or room, so that’s what he did!  I bought a new ceiling fan and he installed that too. I love it!

My next project will be my sons room. Since we live in a modular home, the walks are covered in a textured vinyl and I HATE it! Anything that draws my attention away from the “main attraction” drives me batty. The people that owned this house before us painted the walks dark colors and it makes the rooms look small and dreary. I have decided that all rooms will be painted a light color if yellow, blue, or green, excluding the kids rooms. My sons room will be grey with a purple stripe ruining around the wall, and my daughter keeps changing get mind. Latest is she wants hot pink and black, which I think she will hate once she gets it up so I’m trying for something else. Lol Each room will get a new ceiling fan like the one we poor up last night. They are very nice and budget friendly! 🙂

Okay, I guess that’s enough of my decorating talk. 😉 I hope everyone has a great weekend! I have a Scentsy party this weekend. I’ve never done one before because I have too many friends that sell it and don’t want to offend anyone, but my friend Nicole ripped me in by saying I could earn a free rooster warmer if I had a party! Lol If you need any Scentsy, let me know and I’ll give you her link so you can have it added to my party and shipped right to your door!

SUPER SUNDAY!

So, yesterday was the Super Bowl for us US football fans! We intended on just having some burgers and brats and some chips, queso, and salsa. (pepperoni crisps for me!) Then we invited a couple of friends over. No big deal! While at church, one of our OTHER friends said he was just going to stay home because his wife was in Florida. So we invited him over as well. So it was 6 of us watching the “Big Game!”

I made WAY too much food. Lol but it was all stuff I can eat (minus the chips and buns)!  We had burgers, brats, mozzarella and tomatoes, queso, salsa, tortilla chips, pepperoni crisps (which were a big hit with the non low Carbers), shrimp, and jalapeno poppers,! There was quite a bit of food left over! We had a fun night.

The game itself was a bit of a disaster. I won’t give any spoilers away since I know SOME people don’t watch live. At one point we got into a discussion about American Idol versus Americas Got Talent. One of or friends said that a singer always wins AGT. We started telling him about Kenichi Ebina that won last year and went to YouTube to watch a couple of his performances. (if you haven’t heard of him, seriously YouTube him. Right now! I’ll wait!)

My puppy decided that the pepperoni crisps were for HER and decided to have a few bites. I was a LITTLE bit upset. Those things were good! Of course, that didn’t make me stop eating them. 😉

Overall, we had a great night, joked with friends who were rooting for the loser team, tho THEY didn’t find it as funny. 😉 it was a great night, filled with great friends and great food.

This morning I had a leftover cheeseburger for breakfast. Life is good!

Hope everyone had a great week! 😀
